Algunos \u2014me incluyo\u2014 sostienen que es el cumplimiento estricto de los horarios, otros piensan en el transporte eficiente de equipajes, pocos hablan de casos especiales como la capacidad para transportar ni\u00f1os o inv\u00e1lidos. Un grupo, m\u00e1s sofisticado, lo entiende como atenci\u00f3n en los aeropuertos y hay quienes hablan de informaci\u00f3n al pasajero.<\/p>\n<p align=\"justify\">Pero nos guste o no, y tenga sentido o no, la inmensa mayor\u00eda de los pasajeros y los no pasajeros piensan que servicio en un avi\u00f3n es sin\u00f3nimo de comida y bebida. Desde hace mucho tiempo pregunto \u201cinocentemente\u201d a cualquiera que haya viajado por cualquier aerol\u00ednea \u00ab\u00bfqu\u00e9 tal el servicio?\u00bb y la respuesta siempre tiene que ver, en primer lugar, con esta cuesti\u00f3n.<\/p>\n<p align=\"justify\">Servir comidas y bebidas a bordo es una pr\u00e1ctica que viene de los albores del transporte a\u00e9reo. Parece \u2014aunque no est\u00e1 del todo claro\u2014 que se hac\u00eda en los dirigibles de la DELAG (la primera empresa que transport\u00f3 pasajeros en cantidades antes de la Primera Guerra Mundial) y Paul Codos (un piloto franc\u00e9s) nos cuenta en sus memorias que en la m\u00edtica Air Union de 1920 era corriente emborrachar a los pasajeros para que se sedaran y no incomodaran durante los movidos cruces del Canal de la Mancha en biplanos. Hay muchas otras referencias al tema hasta llegar al s\u00fammum gastron\u00f3mico de la aviaci\u00f3n, que fueron los servicios intercontinentales previos a la Segunda Guerra Mundial.<\/p>\n<p align=\"justify\">Muchos pasajeros dicen que comer algo a bordo es relajante ante una experiencia que siempre produce stress. Un grupo de ellos incluye al alcohol entre los requerimientos de esta terapia y, a fuer de ser sinceros, mucha gente no puede subirse a un avi\u00f3n sin antes tomar un par de copas para lograr el efecto por anticipado. Muchos despu\u00e9s siguen, y las azafatas saben bastante del tema.<\/p>\n<p align=\"justify\">En los viajes largos, adem\u00e1s, los ciclos metab\u00f3licos hacen que los pasajeros sientan hambre, y la ingesta tiene un sentido l\u00f3gico.<\/p>\n<p align=\"justify\">Da para una discusi\u00f3n mucho m\u00e1s compleja definir c\u00f3mo deben ser los alimentos y las bebidas que se sirvan en los vuelos. Hay condicionantes culturales, t\u00e9cnicos, religiosos, sanitarios y de muchos otros tipos. No es un tema f\u00e1cil.<br \/>\nLas aerol\u00edneas saben que los pasajeros quieren comer y beber a bordo, y est\u00e1 demostrado que es un factor tenido en cuenta a la hora de tomar decisiones, por lo que es l\u00f3gico que sea un tema muy tenido en cuenta en los planes de marketing. Es cierto que, en los \u00faltimos tiempos, y sobre todo en las low cost, este servicio ha desaparecido o se ha reducido a su m\u00ednima expresi\u00f3n, pero tambi\u00e9n hay que reconocer que esta reducci\u00f3n est\u00e1 compensada con pasajes muy baratos, que no dan lugar a expectativas.<\/p>\n<p align=\"justify\">El aviso que hoy nos acompa\u00f1a parece de una taberna, pero es de Air France. Muestra con una gr\u00e1fica implacable todo el alcohol que se pod\u00eda encontrar a bordo de un vuelo largo de la compa\u00f1\u00eda en 1989, calmando con creces cualquier intranquilidad de los pasajeros al respecto.<\/p>\n<p align=\"justify\">Fue publicado en <em>Atlas<\/em> de septiembre de 1989. Se trata de una revista de a bordo, por lo que no puede ser considerado una publicidad para ganar pasajeros de la calle, pero s\u00ed como un esfuerzo para fidelizar a los existentes.<\/p>\n<hr \/>\n","protected":false},"excerpt":{"rendered":"<p>Las compa\u00f1\u00edas a\u00e9reas saben que los pasajeros esperan comer y beber a bordo, y esto es un factor tenido en cuenta a la hora de tomar decisiones de viaje por una u otra empresa.
